Klima Aging is a cured meat and cheese seasoning cabinet completely designed and manufactured in Italy using high quality components and a cutting-edge technology.

Built in AISI 304 stainless steel (suitable for contact with food in compliance with CE legislation), insulated with cyclopentane to ensure maximum thermal insulation, Klima Aging is equipped with patents that make it unique on the market.

Each function is shown on the touch screen display with intuitive and personalized icons, thanks to which it is easy to check all the phases of the curing process.

The precision of the control unit allows a perfect management of all the parameters such as temperature, humidity and ventilation, which permit to reproduce the ideal conditions for a quality ripening, even without using additives.

The patented “V-O” air flow system is a unique technology. This system is one of key point that makes Klima Aging the most innovative seasoning cabinet in this industry.

The air is conveyed both horizontally and vertically throughout the cabinet, mantaining constant temperature and humidity in every part and covering homogeneously the cured meat. The asymmetrical forometry of the ventilation panel has been developed with the help of anemometers, in order to achieve the best drying process of all the products placed inside.

Patented ventilation allows you to avoid to move continuously cured meat and cheese inside the cabinet, with obvious advantages in the organization of work.

Klima Aging is equipped with a patented system of custom frames with triangular teeth that facilitate loading and unloading of cured meats.

These frames avoid the use of hooks and optimize the space vertically, solving the difficulties normally encountered in the use of the classic bars.
Thanks to these frames the entire internal volume of the cabinet is exploited, consequently increasing the productivity.

Even the handling of cured meats is facilitated: sliding these frames along their guides it is possible to remove or add more salami without touching or removing the others.

For this reason, in order to make vegan cheese or cured meat, is necessary a professional machine, capable of providing safety to the user, who can thus control all stages of the ripening process using personalized programs created with dedicated icons.

The innovative technology of remote diagnostic and management in our KLIMA allows you to be always connected to the machine control unit for a constant monitoring of the cured meat placed inside, ensuring reliability and quality.

Not only! Remotely, via PC, tablet or smartphone, a whole series of operations can be managed such as configurations, programming and testing of the various components.

An example?
The customer can vary the humidity set point even if he is not physically in front of the machine.
Furthermore, thanks to the presence of a datalogger that continuously records some parameters, it is possible to consult or download the data relating to the operation of the cabinet in excel format, in order to find some anomalies and have H.A.C.C.P. traceability 24 hours a day.

Our patented “V-O” ventilation system allows the air flow to circulate inside the chamber homogeneously, avoiding to directly hit only the product placed in the first floors. A vertical ventilation, such as that provided by the other seasoning cabinets, would lead to an excessive drying of the product positioned at the top, leaving the one positioned at the bottom more humid and dampish.

What does this mean?

  • That you will always achieve a similar level of maturation between different areas of the cabinet;
  • That you will forget to waste time exchanging the position of salami and cheeses during the ripening process, with obvious advantages in managing the job.

The fish that has to be cured must be processed fresh: gutting it and removing gills eliminates the risk of decomposition while leaving fishbone and skin avoids the risk of an excessive drying. During the aging process the water contained in the fibers of the lean part will be reduced, increasing the percentage of fat and making the fish tastier. At the same time the enzymes will make the connective tissues more tender, while remaining fibrous and consistent.

Thanks to the patented oxygenation system, Klima Aging is able to mature any type of fish such as tuna, salmon, swordfish, trout and amberjack in perfect biosecurity: even after 2 weeks the fish aged in our cabinet will not smell bad but will seem freshly caught.

Klima Aging System is also able to recreate the ideal microclimate for the curing of sea salami such as salmon speck, tuna bresaola or swordfish salami. The patent on ventilation allows an uniform and controlled drying while with the intuitive control unit is possible to change the recipes to your liking, depending on the type and sizes of the product placed inside.

  • An adequate insulation of the walls with cyclopentane ensures low energy dispersion.
  • The tropicalized refrigeration unit, in climate class 5, is highly efficient and uses R290 gas, the most efficient and environmentally friendly gas on the market.
    The refrigerating groups generally used in the market consume much more than ours: this turns into higher management costs for the customer. Furthermore, remember that R404 gas will be prohibited from 2020.
  • Defrosting is made using hot gas to reduce times and energy consumption.
  • The internal LED lights do not change the internal temperature of the chamber because they do not heat up. Furthermore they last three times longer than traditional lighting systems.
  • Thanks to the technology used, Klima Aging has a greater internal capacity compared with other similar products. The internal space has been optimized as much as possible installing an evaporator on the top of the cabinet. Having more space to ripen cured meat increases the profit for the user.
